Mexican Food Recipe: Queso Fundido Con Chorizo

 

Recipe

1/2 lb chorizo sausage
1 medium white onion, halved and sliced
1 pepper, sliced (red, yellow or green pepper - for more heat choose poblano or anaheim)
3 cups shredded manchego or chihuahua cheese
salt

Toppings

salsa
guacamole
white onions, diced
cilantro, chopped

1.  Remove the casings from the chorizo and fry in frying pan over medium-high heat. Break into small pieces as it cooks. Ad the onion and your choice of peppers and saute until onion and peppers are wilted and soft.

2.  Assemble queso fundido in 6 small oven-proof dishes. Spread 1/2 cup cheese in each dish, sprinkle with salt and top with chorizo mixture.

3.  Broil for 10 minutes on top rack or until cheese is bubbling.

4.  Prepare toppings in individual bowls for serving.

5.  Serve immediately while hot.

NOTE: If you can't find authentic Mexican cheeses, try monterey jack, cheddar or mozzarella.
