Mexican Food Recipe: Chilaquiles


Recipe

Cooking oil
9 tortillas (day old), each cut into 6 pie-shaped pieces
3 cups enchilada sauce
2 cups shredded roasted chicken
2 cups shredded melting cheese, such as manchego or chihuahua
1/2 medium white onion, sliced
sour cream

1.  Heat 1/2 inch of oil in a large pan.

2.  Fry day old tortilla pieces until crisp. Drain on a paper towel and set aside.

3.  Heat enchilada sauce and keep warm.

4.  Layer sauce, chicken, tortillas and cheese in a oven-safe dish(es). Repeat layers 2 more times.

5.  Top with cheese and broil for 3 minutes until the cheese is melted.

6.  Garnish with sliced onions and sour cream.
