Valentine Heart Brownies

 


Ingredients

1 package fudge brownie mix (13x9-in. pan size)
1/4 teaspoon mint extract
1/2 cup butter, softened
1-1/2 cups confectioners' sugar
1/4 teaspoon vanilla extract
Red paste food coloring, optional
1/4 cup baking cocoa

Directions

1. Prepare brownie mix according to package directions, adding mint extract to batter. Transfer to a greased 13x9-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.

2. Meanwhile, in a small bowl, cream the butter, confectioners' sugar, vanilla and food coloring if desired until light and fluffy. Place in a heavy-duty resealable plastic bag; cut a small hole in a corner of bag. Set aside.

3. Line a baking sheet with parchment paper. Dust with cocoa; set aside. Cut brownies into 15 rectangles. Using a 1-1/2-in. heart-shaped cookie cutter, cut out a heart from the center of each brownie. Reserve cutout centers for another use. Place brownies on prepared baking sheet. Pipe frosting into centers of brownies.

Yield: 15 servings.

Veg Jambalaya

 


Ingredients

1 tablespoon canola oil
1 medium green pepper, chopped
1 medium onion, chopped
1 celery rib, chopped
3 garlic cloves, minced
2 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1/2 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon fennel seed, crushed
1 cup uncooked long grain rice
1 can (16 ounces) butter beans, rinsed and drained
1 can (16 ounces) red beans, rinsed and drained

Directions

1. In a Dutch oven, heat oil over medium-high heat.  Add the green pepper, onion and celery; cook and stir until tender.  Add garlic; cook 1 minute longer.  

4. Add the water, tomatoes, tomato sauce and seasonings.  Bring to a boil; stir in rice.  Reduce heat; cover and simmer for 15-18 minutes or until liquid is absorbed and rice is tender.   Stir in beans; heat through.

Yield: 6 servings

My Review:

Wren is an orphan and has lived at Sanctuary since childhood and is a loner.  His friend Nick is now dead and his companion is a monkey named Marvin (?)  Everyone is wary and scared of him since he's unpredictable!

Marguerite lets her dad run her life so she keeps a low profile and hangs around the privileged kids.

I hated Wren's mom with a passion (I'm pretty even tempered) but the way she treated Wren was just too much.  I'm glad she got what was coming to her!!!!
