Ricardo M. James grew up in a rural town in Wyoming. He studied
Spanish Pedagogy at Brigham Young University where he also taught
Spanish and directed study abroad programs to Mexico. He currently owns a
consulting firm that provides technology solutions to K-12 schools
across the United States and South America. He lives in Springville,
Utah with his wife and five kids. He blogs food goodness at

My Review:
There is an introduction that Mr. James shares with us the recipes his mom made growing up in Mexico and the explaining the basics of Mexican cooking.
There is a very fun and informative Platform section which explains how to pan and use corn and flour tortillas, sopes, gorditas, totopos and tamales. The rest of the sections are split into Main Dishes, First Dishes, Drinks and Desserts.
The Basics consist of Salsas, Moles, Enchilada Sauce, Mexican Rice, and Refried Beans.
The cover is very appealing and appetizing which makes you want to read and try out the recipes. Love how all the recipes are very easy to follow and have a beautifully illustrated picture of the finished product.
The recipes I would love to try are the Queso Fundido Con Chorizo, Tamales De Puerco, Camarones Ahogados En Mole, Huevos Rancheros, Chilaquiles, Chile Verde, Enchiladas Suizas, Enchiladas Sauce, Mole Poblano and Mole Rojo Sauce, Taquitos De Pescado, Enchiladas De Pollo En Mole Poblano, Tamales De Chile Y Queso, Lasana Con Habanero Chile, Agua De Jamaica, Agua De Tamarindo, Limonada, Horchata, Flan, Flan De Chocolate, Hot Chocolate and Platanos Fritos.
