In “Barnabas Tew and the Case of the Nine Worlds,” Barnabas, the eponymous character, and his assistant Wilfred find themselves in Asgard (the realm of the gods in Viking mythology). He is given a guide, a Viking warrior/storyteller by the name of Brynhild, who helps them solve the great mystery at hand: someone is plotting to release Loki from confinement, and thereby begin Ragnarok, aka the end of the world!

Vikings didn’t, as a rule, keep a lot of written recipes. Still, it is possible to gather from anecdotal and archaeological evidence that their diets consisted mainly of meat, fish, and grains. Also, it seems they had a great appetite for fruits, like plums and prunes, and actually imported these things (imported probably being a euphemism for plundered, ahem).

One thing the Vikings were decidedly not, unsurprisingly, was vegan. I am, however, and so I have adapted a traditional Viking stew into a vegan version. I think Brynhild would approve!

1 package of cubed seitan

2 cups plain, unsweetened almond milk (oat milk would work wonderfully here, too!)

Tofutti “sour cream”, according to taste

4 tblsp vegan butter substitute

1/3 cup wheat flour

2 cloves of garlic, minced (or 2 tblsp of prepared minced garlic)

¼ cup watercress, shredded (spinach can be substituted if you can’t find watercress)

1 finely chopped medium onion

1 small turnip, cubed (a small potato would serve just as well here!)

1 medium stalk celery, cut into bite-sized pieces

1 medium carrot, cut into bite-sized pieces

3 tsp smoked paprika

3 tsp sea salt

1 tsp coriander

1 tsp dried mustard

1 tsp pepper

Here comes the easy part: cooking it! Just put all of the ingredients EXCEPT for the seitan and the Tofutti) into a crock pot (hint: it’s easiest if you add the liquids first, then mix in the flour, then plop everything else right in there). Set the crock pot on high, let it all cook for an hour, then add the seitan. Let it cook for one more hour in the crock pot. Make sure to check periodically that it’s not getting too thick…if it is, just add a bit more almond milk.

When the veggies are tender and the stew is thickened to the perfect consistency, it’s ready to serve! You can serve it over rice or noodles (or pearled barley, if you want to be like a real Viking!”) and top it off with the Tofutti, like how you would with a stroganoff dinner.

That’s it! See how easy it is to eat like a (vegan) Viking?

About the Author

Columbkill Noonan has an M.S. in Biology (she has, in turn, been a field biologist, an environmental compliance inspector, and a lecturer of Anatomy and Physiology).

When she’s not teaching or writing, she can usually be found riding her rescue horse, Mittens, practicing yoga (on the ground, in an aerial silk, on a SUP board, and sometimes even on Mittens), or spending far too much time at the local organic, vegan market.
